A 50/50% blend from the Coal River Valley and Huon Valley, the hand-picked and only highest quality portion of the juice was used, no harder juice from pressings early on in the process. This gives you that more pristine, more palatable and more flavoursome wine. Why would you do it any other way? Cost! So no expense spared here guys, little wonder these guys are the Best New Winery in the latest Halliday results. So then to give balance and exuberance only the minimal amount of pressing were added for length and complexity. A little experimental with yeast here. Metschnikowia pulcherimma yeast strain is something that I haven’t seen or heard of since my University microbiology classes but from memory gives heightened florals and earthiness but dies off at lower alcohol levels which is why the winery has inoculated with their own secret blend a bit later on to keep everything flying along. A fair bit of building texture and flavour from time on lees has followed fermentation to give further depth and length and most probably an extra point or two. It’s 12.5% alc/vol and has a touch of balancing residual sugar and a wonderful long line of natural acidity keeping it fresh and holding flavour. Do not be scared to pair with just about any food that you would expect a riesling to support but hells bells mine won’t last that long, I will drink it way before the food has a chance to hit the table.
